A new, innovative coffee from Martín Ureña
We’re thrilled to introduce a natural microlot single origin from Finca La Trinidad and processed at innovator Martín Ureña’s La Chumeca Micromill. Martín produces only natural coffees, wherein the bean is left to dry inside its outer fruit during processing, allowing it more time to absorb the fruit’s nutrients, sugars and flavors. To select only the ripest coffee cherries, he’s developed a freshwater float technique, and he’s more recently been experimenting with anaerobic fermentation of coffee cherries in distillery tanks, from which he siphons a sweet coffee cherry liqueur as a byproduct!
We love this coffee for its aroma of stone fruit and graham cracker, and its flavors of raspberry, cocoa, grape, cherry cordial and wine. It features a medium, creamy body, a tart acidity, and a clean, sweet, tart finish.
Our recommended brewing recipe is 28 grams for a 12oz cup, hot or iced.
